Having lived in Albuquerque for 9 years, huevos rancheros is a mandatory staple for breakfast. Needless to say, I became VERY good at making huevos rancheros! We then moved to No. Virginia, where we lived for 16 years, and I had a hard time finding a good chorizo sausage until I found Logan's Hot Mexican Style. It became a major ingredient for us and now everyone loves my huevos rancheros once again. In my opinion, it is the best chorizo outside of New Mexico! We moved down to Southwest Florida 10 years ago and still cannot find any good chorizo, so luckily I was able to purchase Logan's on their website and have it mailed to us. My famous huevos rancheros is now back on the must have list! In fact, we have family down here this week, so I ordered Logan's and everyone is now very excited for me to make their all-time favorite breakfast. And, FYI, my recipe consists of flour tortillas, home fried potatoes, Bush's chili beans, Logan's Hot Mexican Style chorizo, chopped scallions, some pico de gallo salsa, over easy fried egg or two, and all smothered with Hatch green chili enchilada sauce. It's not all that spicy - I've had many people try it and remark how they usually don't like spicy foods, but they love my recipe. If you want it a bit more spicy, you can add some Hatch chopped hot green chilis to the enchilada sauce.
