It had been over three decades since I had a real polish sausage

Growing up in Baltimore, I knew the taste of a real polish sausage, I used to work downtown, so I would go to Lexington market a couple time a month for the one and only Pollack Johnny's polish sausage. I moved to NC in 1988, and until recently hadn't had the flavor of the one of kind smoked sausage. I am older now, so, I can't eat them the way I used to. But believe me I took my time and enjoyed every juicy bite, just as I remembered.

GOOD IF BOILED

Having a polish granny who made polish sausage often, I knew you don't grill the stuff. Plus I used to get chili dogs using this brand off a food truck where I worked and they were sitting in the hot bubbling water for over an hour before being sold. Always the best. Now my granny would hand grind pork, peppercorns, whole garlic and salt and hand pack the casings and we enjoyed it most every time we went to her house. This is somewhat different and more like the big name Kielbasi in the supermarket. It is meaty and tasty though. I tried the recipe for cooking (on the grill) but it got dry and awful. I don't like any brown colored casing so I quickly abandoned that method and went with what I knew. So glad I did. So much better. Very tasty with a bit of a pop when you bite into it. Personally I like either mustard or hot dog chili, mustard and fine chopped onion topping. Great garlic aftertaste with this stuff.
